matar-batata rassa (potato-peas gravy)

Its a very simple yet tasty dish ,tastes very nice with puri,try in the season of peas just yummy.

ingredients---
4 potatoes
1/2 cup peas
2 med onions finely chopped
2 med tomatoes finely chopped
2 tsp garlic ginger paste
1 green chilli
curry leaves
2 tbsp oil
cumin seeds, mustard seeds, turmeric powder, hing, red chilli powder for the tempering
1/2 tsp kitchen king masala
1/2 tsp garam masala
kasori methi crushed
salt, sugar to taste
corainder leaves for garnish.

how to----

Clean and peel the potatoes. Cut then into cubes of med size and microwave for 6/7 mins in water. They get almost done but not fully. U can do this in a pressure cooker as well.
In a pan fry the potatoes in 2 tbsp oil till golden.Remove them. In the same oil add mustard seeds when they crackle add cumin seeds , hing, and finely chopped onions. Fry the onions till golden brown. Add the ginger garlic paste fry for a few secs and then add the tomatoes. Fry till they turn mushy.Add turmeric powder and red chilli powder fry till oil starts separating.
Add the fried potatoes and peas. Let them coat well in the masala. Add little water to desired thickness of the gravy. Add salt , a little bit sugar,garam masala,kitchenking masala and kasoori methi.Let it cook for 5 mins on low flame.
turn the gas off and garnish with coriander leaves. Serve hot with puris.

mix healthy paratha

There are a lot of recipes for parathas. This is my version of a very healthy mixed paratha for those who don't like veggies as such but don't mind eating then in hiddden forms. So u guessed it, its very good for kids.

Ingredients---
2 cups wheat flour
1/4 cup jowar, flour,bajra flour, rice flour, besan, soya flour each.
2 tsp oil.
1/2 cup grated carrots, grated beetroot, grated bottle gourd(dudhi,lauki)each.
1/2 cup tomato puree.
2 tsp coriander chopped.
1 tsp roasted sesame seeds.
1 tsp ginger garlic paste
1 tsp green chilli paste.
1 tsp cumin powder
1 tsp coriander powder.
salt to taste.

how to ---
Mix all the flours and salt first.To it add garlic ginger paste,chilli paste and cumin coriander powders. Add the sesame seeds, coriander and grated veggies and mix well. Then add the tomato puree. Mix it all together.Add the oil 2 tsp. If needed add a little water to make a dough.
Roll parathas with the dough and roast on Tawa on both sides with little oil. Serve hot with tomato ketchup. They taste yummy and have a wonderful colour.
